Simurgh is a Bird-type enemy that you can find along the Djose Highroad. You need to capture five of each Bird-type enemy to unlock Pteryx in the Species Conquest section of the Monster Arena.
Simurghs are very easy to defeat, but because it is a flying enemy, you should focus on having Wakka take them out with his Blitzball. Alternatively, have Lulu use fire-based Black Magic to take them out quickly.
Its regular attacks have a chance of inflicting Darkness (Blind). Have your party members use 
Eye Drops or cast 
Esuna to remove the status.
